Simple Servings at Mines Market
Overview:The Simple Servings Station is specifically designed to offer safe and appetizing food choices for students with food allergies, intolerances, or those who prefer plain and simple foods. This station excludes foods made with the FDA's most common allergens, including:
Peanuts
Tree nuts
Wheat
Soy
Sesame
Milk products
Eggs
Shellfish
All foods offered are made without gluten-containing ingredients.
Typical Menu:
Proteins:Chicken, fish
Vegetables:Broccoli, carrots,ect.
Whole Grains:Brown rice, quinoa
Beans/Lentils:Garbanzo beans, black beluga lentils
Meals are available at lunch, dinner, and brunch on weekends.
Safety Measures:
Staff members are trained to avoid cross-contact.
Separate equipment, storage areas, utensils, and preparation areas are used to minimize the chances of allergens in Simple Servings foods.
Simple Zone
Simple Zone is a self-serve pantrylocatedinMines Market.It offers prepackaged items that are free fromgluten, dairy, and nutsand provides dedicated appliances such as a toaster and/or microwave for customers with these dietary needs.The area is entirely free from gluten, dairy, and nut-containing foods and includes a variety of options such as bread, desserts, cereals, pastries, and condiments.In order tomaintaina safe and allergy-free environment, werequestthat students refrain from bringing food from other stations into Simple Zone and only use the utensils, appliances, and plates provided.
If You Have an Allergy, Intolerance or Medical Need
For students with medical conditions thatimpacttheir ability to dine well on campus, we strongly encourage a conversation with our Registered Dietitian, Executive Chef, and/or our General Manager. In many instances, our dining team can easilyassistwith special needs.
Occasionally, Dining Services cannot meet a student’s medical needs within normal service.We may require additional medical documentation to enable us to develop a more specific meal plan accommodation.In this situation, we ask that the student contact the Center of Dis/Ability & AccommodationsOffice of Student Accessibility Services. Together, our departments work to serve our students with medical needs related to dining on campus. Meet the Dietitian
Gina Vega, RDNis our District Registered Dietitian providing nutrition education and support throughout Colorado. As an avid nutrition enthusiast, Gina is excited to meet with students with dietary restrictions and allergies and meet with students hoping to create lifelong healthy habits. Gina has a passion for creating a positive health culture. Food choices and eating habits increase mental and physical health, personal and academic growth, community, and a joyful college experience. Her food philosophy is a non-diet, “all foods fit” approach to nutrition and health, and she enjoysteachingstudents about Intuitive Eating and debunking nutrition myths and fads.
